Good morning! Today I wanted to share one of my favorite desserts that is perfect for Fall (actually it’s perfect any time of the year!) I have been making this cake for years and have tweaked the recipe to my liking over the years. I hope you enjoy it as much as my family and I do!

Fresh Apple Cake
2 c. sugar
1 c. canola oil
2 tsp. vanilla
2 eggs (beaten)
1 tsp. cinnamon
3/4 tsp. salt
3 c. flour
1 1/4 tsp. baking soda
3 c. apples (peeled and chopped)
Preheat oven to 350. Grease a tube pan, Mix together sugar, oil, vanilla, oil and salt. Add in beaten eggs. In a separate bowl mix flour, baking soda and cinnamon together. Add the first mixture to the dry ingredients and mix together until combined Stir in apples. (Mixture will be stiff, this is normal!) Bake for 55-65 min. or until toothpick inserted in center comes out clean. Let cool and then flip over onto cake platter. Enjoy!
