Apple Cake recipe

When I was little my mom would make a yummy cake with apples in it and it was my absolute favorite.  As I’ve gotten older, gotten married and had kids this is still a favorite of mine.  I have just a few apples left over from when we went apple picking so I decided to make this cake today.  Thought the years I have adjusted this recipe just a bit to my liking…and it’s still as good as I remember.   I hope you enjoy!

Fresh Apple Cake

1 c. oil ( I use Canola)

2 c. sugar

2 eggs

2 tsp. vanilla

1 tsp. salt

1 tsp. cinnamon

3 c. flour

3 c. apples


Cream together sugar and oil.


Add eggs and vanilla to sugar and oil mixture and mix until blended.


Mix together remaining dry ingredients (baking soda, salt, cinnamon and flour) until blended.


Mix dry ingredients and wet ingredients together and mix well.  Mixture will be a bit dry when mixed together.


Peel and cut apples.


Add to mixture and mix well.

Place in greased tube pan.


Bake for about 1 hour & 10 min. or until toothpick inserted comes out clean.  Allow to cool for 20 minutes and then gently move onto a serving plate.
